Executive Chef Robert Douglas’ vision for The Vic captures his passion for the freshest ingredients prepared simply and deliciously. In his words, “Showcase the food, not the chef.” Wholesome food comes together artfully in a feast for all your senses: Bright colors of fresh produce from Victory’s own Chef’s Garden and local farms. Aromatic stocks simmering on the stove. Salt-cured meats sizzling over a mesquite fire. All culminating in a rich variety of taste, the most wonderful sense of all.

Meet Executive Chef Robert Douglas. The Vic’s top chef has crafted his culinary skills at acclaimed restaurants from coast to coast, mastering the regional flavors and styles of South Carolina, Georgia, California, Idaho, and of course, Arizona. His career also spans several seasons working with famed chef and five-time James Beard Award winner Tom Colicchio.

Chef Robert’s training began with an apprenticeship program covering the foundations of sauces, stocks, butchering and line positions, and later continued with in-depth training as a baker and pastry chef. This experience, combined with regional specialties help create what he calls “true American cuisine,” as diverse as the melting pot character that makes this country so unique. “American Cuisine doesn’t mean boring or unsophisticated. We have such unique and varied food culture that lends itself to a highly creative and diverse menu,” he explains.

High above the desert floor, the intimate patio overlooks twinkling lights of Verrado and downtown Phoenix. Overhead to the west is Tiger Mountain, backlit by storied Sonoran sunsets. There may not be a better spot on the planet to spend an evening.

Although inside The Vic is spectacular in its own right. Floor to ceiling windows that welcome the outside in. An impressive bar with warm wood appointments. And a full exhibition kitchen, where cooking becomes the main show when you watch Chef create your meal in style.
