Signature Recipe

Steak Tampiquena


Queso Sauce Ingredients:


1 quart Heavy cream

½ can Chipotle puree

½ cup Red chile sauce (preferably New Mexico)

½ cup Diced green chiles

½ cup Roasted red peppers

4 cups Shredded Cheddar Cheese

2 cups Shredded Jack Cheese

3 ounces Roux

1 cup Pickled jalapenos, chopped

 Salt and pepper to taste


Queso Sauce Preparation:


Bring all ingredients, except cheese, to a simmer. Thicken with roux. Whisk in cheese and simmer until melted. Continually monitor and stir so cheese does not burn.


Shrimp Ingredients:


Do not use the entire spice blend in one serving. You will be left with extra seasoning for future use.


3 T Favorite store-bought blackened spice blend, no salt

3 T Chipotle pepper

3 T Black Pepper

1 ½  T Salt

½ T Crushed red pepper

3 T Roasted garlic pepper

4 Large, peeled shrimp


Shrimp Preparation:


Mix spices together and generously rub on shrimp. Add a little oil to a pan and sauté shrimp on high heat.



Steak Preparation and Dish Assembly:


Grill flatiron, filet, New York Strip or desired steak to preferred doneness. Top steak and shrimp with queso sauce. Serve with black beans and Spanish rice.
